Porterhouse Steak: Cut from the short loin with the tenderloin, a huge steak whose T-Bone separates the loin and the tenderloin. This combination steak offers the best of the shell and the filet in one serving.

Shell or Strip Steak: Cut from the short loin without the tenderloin. Arguably the best steak in both flavor and texture. With the bone, it is a Shell Steak. Without the bone, it is a Strip Steak, also know as a Kansas City Steak or a New York Steak.
